Green Bean Recipes Good For Glycemic Control
When I first heard that green bean recipes were anti-diabetic, I must admit, I was skeptical. I was reading a book about juices. It was part of my quest for a natural solution.

Another concern I had about this green bean recipe was the taste, and the concentration of the juice. This is my modification of the of that juicing recipe that nearly gave me a hypo each time I used it...
1 handful of green beans
1 small carrot
1/2 Celery stick (stalk)
Parsley
1 clove or garlic
Pass through a juicer, starting with the beans and ending with the carrot since you can use it to push the other ingredients down the hopper.
Optionally, you may mix the green bean juice with soymilk to make a full cup of easy-to swallow goodness.
Green bean vegetable stir fry
Of all the green bean recipes I have tried, my favorite is the vegetable stir fry. It's flexible, healthy, and very easy to prepare.
1 pound green beans
4-5 carrots, sliced
1 red bell pepper
1 medium onion
Juice of 1 lemon
Olive oil
salt to taste
parsley (fresh)
Make sure vegetables are fresh. Saute onion in olive oil. Cut vegetables, EXCEPT parsley. Cook for about 3 minutes or until tender but still crisp to the bite. Remember to stir frequently, and add salt to taste. Add fresh snipped parsley.
Tips for cooking using green beans
- As with all vegetables, when cooking, use a small amount of water. Most vegetables already have lots of water in them.
- Do not over-cook. Over-cooking may destroy some nutrients
- Use a combination of vegetables that are colorful and aesthetically appealing.
- Vegetables that may be eaten raw will avoid the destruction of nutrients that are not heat-stable.
- Green bean recipes most often involve cooking, BUT should not be over done.
