These healthy banana bread recipes include nuts, tofu (bean curds), and quite a bit of sugar, so be careful if you are a diabetic or are very concerned about your sugar intake.

Instructions for making banana bread
Combine the following ingredients in a bowl and let sit for 5 minutes:
-- 3/4 cup warm water
- 1 tablespoon yeast
- 1 tablespoon honey
Using a blender, blend the following until creamy
-- 1/2 cup raw almonds (with skins)
- 3/4 cup warm water
- 1 box (12 oz) Mori-Nu firm tofu
- 1/2 cup honey
Pour the blended mixture into the bowl with the yeast mixture, then add
-- 3 cups whole wheat flower
- 1 tablespoon gluten flower
- 1 tsp spoon salt
-- 1/2 cup chopped nuts, walnuts are good
- 2 cups mashed ripe bananas
- 3/4 cup chopped dates
Mix well. Expect the batter to be thick. Put the mixture into a greased and floured pan to rise for 30-45 minutes.
Bake at 350°F for 40—50 minutes. It makes a large loaf. The serving size is 1 slice (260 calories, 20g sugar per serving).
Banana nut cake
The Ingredients:
- 1/2 cup butter
- 1 cup sugar
- 2 eggs slightly beaten
- 1 cup mashed banana
- 1 cup chopped nuts
- 1/2 cup milk
- 2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt (optional)
- 1 teaspoon vanilla
Cream butter and sugar. Add eggs. Beat thoroughly. Add banana and essence. Sift dry ingredients together and add alternately with milk. Bake at 350 degrees F for 20 to 30 minutes.
